Chicken tikka kebab skewers

Ingredients

  • 2-3 lbs of chicken tenderloins cut in cubes
  • 5 cloves of garlic,1 tablespoon of fresh ginger, 1 cup or handful of fresh cilantro/Coriander (Blend it into a paste)
  • 1 tablespoon plain yogurt
  • 2-3 tablespoons of Olive oil
  • 1/2 teaspoon of pepper flakes (optional)
  • 1/2 teaspoon of turmeric powder
  • 1/2 of red chili powder
  • 1 teaspoon garam masala
  • 1 tablespoon salt
  • 1 teaspoon red food color (optional)
  • 1 teaspoon fresh crushed black pepper
  • 1 cup of sweet onions and bell peppers cut into cubes
  • Bamboo skewers
  • Lemon for garnish.

Instructions

  1. Marinade the Chicken cubes with(ginger, garlic and cilantro paste) salt, black pepper, turmeric, red chili, garam masala powder, red pepper flakes, red food color, yogurt and 2 tablespoons of olive oil. Mix well and set aside for an hour in the refrigerator.
  2. Start queuing the onions, bell peppers with the marinaded Chicken cubes, once done put them back covered in the fridge to cool for another 15-30 mins.
  3. Use any grill pans you have. Start with medium-high heat. drizzles the Olive oil or any cooking spray.
  4. Add in your skewers, don't crowd them or else they won't cook evenly. cook them on each side for approximately 6 mins or until tender and temperature rises to 160 F. Use the cooking spray and cover and cook another minute.
  5. For garnish, drizzle some lemon juice and chopped cilantro.
  6. Serve as an appetizer. Your guest will love it!
