Almond Banana Cookies

Oh my goodness! Really the “goodness” of these cookies make me wanna eat that whole plate! This amazingly soft and delicious Gluten Free  cookie is super simple to make. The combination of banana and almonds is a match made in heaven. You got to try it out to taste this amazing combination.

The recipe is simple and the cookies are extra soft and yum! Let’s start with the recipe.

Almond Banana Cookies with white chocolate chips

Ingredients

  • 4 ripe bananas
  • 3 cups Almond flour
  • 1 cup gluten free flour
  • 1 cup cane sugar or Granulated sugar
  • 2 sticks of soften (salted) butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon cardamom powder (optional)
  • 1/2 teaspoon nutmeg powder
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon milk
  • 1 bag of white chocolate chips
  • 2 tablespoons of sliced almonds for garnish.

Instructions

  1. Preheat the oven to 375 F and line the baking sheets with aluminum foil and set it aside.
  2. In a large bowl mix the soften butter and sugar with a mixer, add in mashed bananas and further mix
  3. Add in the milk, vanilla extract, salt, baking soda, nutmeg powder, cardamom powder and mix well with the mixer.
  4. Add in the flour and mix all the ingredients together with a spatula
  5. Lastly, add the white chocolate chips into the cookie dough mixture and mix the chips into the flour with the same spatula. Set it aside for 5-10 mins.
  6. With the help of a large spoon, spoon the mixture out into the lined baking sheet and bake at 375F for13-15 minutes or until golden brown.
  7. Add 2-3 sliced almonds on top of each cookie right out of the oven.
  8. Let them cool on a cooling rack for 10 minutes before serving.
