Sugar-free Walnut Banana Cake

This cake is light and fluffy. It can be sugar-free if you add splenda dark brown sugar to it. One of my mom’s favorite recipes. Try this at home and you will not be disappointed. It’s a perfect tea cake recipe.

Ingredients

  • 2 ripe bananas
  • 1/2 cup Splenda dark brown sugar (or 1 cup of regular dark brown sugar)
  • 2 tbsp of milk
  • 1/2 cup vegetable oil
  • 1/2 teaspoon each of baking powder, baking soda, cinnamon powder, nutmeg powder and salt
  • 1 to 2 tbsp of vanilla extract
  • 1 large egg
  • 1.5 cups of unbleached flour
  • 1/3 cups of walnut chopped (You can also add 1/4 cups of chocolate chips )
  • For garnish, handful of sliced Almonds and brown sugar

Instructions

  1. In a glass bowl start by mixing together ripe bananas, vegetable oil, milk, dark brown sugar.
  2. Add in cinnamon powder, nutmeg powder, salt, baking soda and baking powder , vanilla extract and a large egg, Blend it all together to a smooth consistensy.
  3. Add in the unbleached flour, walnuts . Mix with a spatula.
  4. In a cake pan, fold in the parchment paper and spray some PAN olive oil spray.
  5. Assemble the cake mix on the pan and garnish it with brown sugar and sliced almonds.
  6. Preheat the oven as you prepare your cake mix at 350F
  7. Put the cake in t bake for 50 mins to the oven at 350 F
  8. Once it's fully cooked, take it out and check it with inserting a tooth pick ,make sure the tooth pick comes out clean. Let cool for 5 mins and serve hot !
