Protein-packed Spicy sausage soup

Ingredients

  • 2 Italian spicy sausages crumbled
  • 1 Medium Vidalia onion chopped
  • 2 cloves of garlic minced
  • 1 stick of celery stick cut into small cubes
  • 1 sweet potato cut into small bite sizes
  • 1 carrot diagonally sliced
  • 2 tablespoon of butter
  • 1 tablespoon of flour (optional)
  • 1/2 teaspoon of dried Oregano(or fresh if you have it)
  • 3-4 basil leaves coarsely chopped
  • 1/2 a can of garbanzo beans
  • 1/2 cup of any pasta or noodle preferred
  • 1 cup of water
  • 2 cups of Chicken broth
  • salt, pepper, and a dash of cayenne. (optional)

Instructions

  1. In a large pot on medium flame, melt the butter and add in minced garlic. Saute onion, celery, carrots, and sweet potatoes. Add in the flour and mix well for 2 mins. Add in salt, pepper as desired.
  2. Drop in the crumbled sausages (take off the skin) and saute until it turns brown.
  3. Then add in your 2 cans of chicken broth and whisk in all the bit stuck to the pot. Simmer for 8-10 mins and then add in your garbanzo beans and pasta.
  4. Add in 1 more cup of water, Oregano, a little pinch of cayenne pepper, cover, and cook for 15 mins.Finally, sprinkle fresh basil leaves for garnish.
