Coconut Chutney

This is another great chutney to try at home. If you ever have had any South Indian food like Masala Dosa or Idli sambar or Mendu Vada, this delicious chutney is the best accompaniment with it. Everyone in the south of India probably everywhere else in Asia makes this chutney. Coconut is a huge part of Indian food. It’s one of my favorites because you can eat it as a side with Pakoras and samosas too! It tastes so yum because of the fresh frozen coconut in it. You can buy a frozen fresh coconut at any Indian or Asian food grocery. You have to give it a try. super easy to make.

Ingredients

  • 1 cup fresh frozen shredded coconut
  • 1/3 cup of roasted peanuts
  • 2-3 green chilies
  • 4 cloves of garlic
  • 1/3 cup or a handful of Cilantro
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup of water

Instructions

  1. Blend all the above ingredients in a blender until a smooth paste is obtained. Once it's a nice smooth consistency then check for the salt and add more if you'd like.
  2. The Chutney should look something like this.
  3. Lastly, Garnish (optional) 1 tablespoon of oil heated in a pan, add in 1 teaspoon of mustard seeds and let them spatter. Throw them over the smooth coconut chutney.
