Onion Bhaji/Pakora (Gluten free)

by thecurrytheory

This appetizer is a combination of spicy, salty, and savoury. It’s made with chickpea flour, sliced onions, green chili and some other spices.

One of the most loved appetizer at any Indian party. Super crispy, quick n’easy to make. Totally my favorite to enjoy thoroughly on a rainy day!

Ingredients

  • 1 large red or vidalia onion thinly sliced
  • 1-2 green chilies thinly sliced (optional)
  • 1 handful of chopped cilantro
  • 1 cup gram flour ( chickpea flour found at any Indian grocers)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon Ajwain or cumin seeds
  • 3-4 tablespoons of water (as needed)
  • 1/2 cup of vegetable or canola oil for frying

Instructions

  1. In a large bowl, mix in the sliced onions and green chilies with cilantro, salt, red chili powder, turmeric powder, baking soda, ajwain seeds or cumin seeds (you can add both the seeds).
  2. Using your hands, mix the whole mixture without using any water. (onions do have their natural water which is the key to more flavor).
  3. As needed, add in little bit of water to make sure its well blended and has thick sticky consistency.
  4. In a pot add in the oil to be heated and slowly add in the mixed batter with your hands or help of a spoon. Fry until golden brown. Enjoy this yummy appetizer with some ketchup, tamarind sauce or coriander chutney.
