Guacamole

We all LOVE Guacamole! And why should we not! It’s so yum and easy to make. This recipe is a crowd pleaser for sure. I have made Guacamole for years now and every time I have had it at a restaurant , my kids always say they love mine better. Well here is a simple recipe of mine Guacamole.

Ingredients

  • 2 ripe Avocados (Any Farmers market OR Giant food stores have the best ones)
  • 2 tablespoon of Pico de Gallo (Or 2 tablespoon mixture of chopped tomatoes, cilantro, jalapeno and onions)
  • Quarter slice of a fresh lemon juice (1-2 tablespoons of juice)
  • Freshly crushed salt and Black pepper to taste
  • 1 tablespoon of extra virgin Olive oil or regular olive oil
  • 2 tablespoons of chopped Cilantro ( half used for garnish)

Instructions

  1. In a medium bowl, add in ripe avocados (skin peeled and seed off).
  2. To it , add 2 tablespoons of Pico de Gallo, some salt, black pepper, olive oil and freshly squeezed lemon juice.
  3. With help of a tenderizer or a masher , mix all the ingredients lightly together until blended to a soft consistency.
  4. Then garnish it with some fresh cilantro
  5. Serve it up with Multigrain Tostitos or any of your choice
