Today I will be sharing a simply a delicious alternative to boring scrambled eggs.

This dish is made with less than 5 ingredients and is ready within minutes.

Anda Bhurji (Scrambled eggs Indian way)

Ingredients

  • 4 eggs
  • 1/2 an onion chopped
  • 2 green chilies or 1 Jalapeño pepper chopped
  • Cilantro optional
  • 1/2 teaspoon of turmeric powder
  • 2 tablespoon oil
  • Salt and black pepper to taste

Instructions

  1. Heat oil in a medium non-stick pan.
  2. Once heated, add chilies, onions and turmeric powder. saute for 5 mins or until
    golden brown.
  3. Crack eggs one at a time and sprinkle the salt and black pepper to your taste.
  4. Mix well and start mashing them together for about 4-5 mins or until cooked.
  5. Sprinkle a handful of chopped cilantro for garnish on the scrambled eggs.
  6. Enjoy it hot with some toasted buttered bread or roti
