Mumbai Chaat Vegetable Sandwich

The city of Mumbai has innumerable street vendors with their specialty foods. One of my all-time favorites growing up was this vegan vegetarian sandwich sold right outside my school. It was so delicious and seriously magical for me and my friends maybe because that’s what we could afford with our little to nothing allowance we received from our parents. None the less I was thankful then and now to share this amazingly scrumptious and easy recipe.

Ingredients

  • A handful of Thinly sliced boiled potatoes, fresh tomatoes, onion and cucumber
  • A pinch of salt, black pepper, and MDH Chunky chaat masala
  • 1 teaspoon of spicy ketchup (hot and sweet-Maggi brand ketchup) or any regular ketchup will do.
  • 1 teaspoon of coriander and garlic chutney(Indian grocers)
  • 2 slices of Honey wheat bread (you can use any)
  • 1-2 tablespoons of butter or (substitute Coconut butter )
  • 1 tablespoon of shredded cheddar cheese (optional)
  • PAM spray for grilling

Instructions

  1. Start by spreading butter and coriander chutney on both sides of the bread slice.
  2. Assemble your sandwich with slices of tomatoes, cucumber, onions, and boiled potato.
  3. Then sprinkle some salt, black pepper, cheddar cheese, and chunky chaat masala.
  4. Finish it up with tomato ketchup and some more chunky chaat masala.
  5. Grill it with PAM spray and little butter on top so it doesn't stick to the grill pan.
  6. Serve with some ketchup and savor the taste I loved so much!
  7. You can add any vegetables you like (beets, avocado, or bell peppers) have some fun with it!
