Almond Cookies

Do you get cravings for something sweet every day? I do. I have been so tempted to eat Ice cream, chocolate, cookies, and pretty much anything sweet I see at home now during the COVID-19 phase.

I’m sure all of us are trying to be healthy and avoid things that aren’t good for your health. This recipe is actually a good satisfactory alternative to eating Ice cream and sugar-loaded cookies.

Also, it was my sweet friend’s birthday and I had to make her what she likes, Almond cookies. I hadn’t seen her in 5 months and even if it meant that I could see her for a few minutes I was happy. So here’s a quick and easy recipe for these crispy almond cookies. I hope you enjoy them, I know my friend did! 🙂

Ingredients

  • 2 cups Almond meal
  • 1 stick of butter melted or cooking coconut oil (8oz)
  • 1/2 cup brown or white sugar (whichever you prefer)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoon Vanilla extract (you could use almond extract if you like)
  • 20 almond slices

Instructions

  1. Start by preheating an oven at 325 F, simultaneously in a bowl mix melted butter with sugar and vanilla extract, blend with a mixer on low speed for 2-3 mins.
  2. Then add in 2 cups of Almond flour, baking powder, and salt.
  3. Blend it well, start making balls or actually flatten round shaped cookies and place them on the cookie tray.
  4. Bake at 325 for 20 mins or until light brown in color.
  5. Take them out of the oven and place almonds slices in the middle of the cookies.
  6. Put them back in the oven to bake for another 3-5 mins.
  7. Take them out, let it cook for 5-10 mins and then enjoy!

Notes

Makes about 20 cookies.
