Seasoned Shrimp fried rice

“Mom! give me more”, is what I hear from my kids once they taste this delicious shrimp fried rice. One of my family favorites and super easy to make. Here’s the recipe.

Ingredients

  • Marinate 2 cups of peeled and divined Shrimps(large) in a bowl with a dash of salt, black pepper, olive oil, and 1 teaspoon Ginger garlic cilantro paste. Set aside.
  • 3 cloves of minced garlic
  • 1 cup of frozen veggies (I normally use peas and carrots) Substitute any other veggies
  • you prefer.
  • 2 eggs scrambled in 1 tbsp of butter
  • 3 cups of cooked cold white Jasmine rice.
  • 2 tbsp of soy sauce (prefer the low sodium)
  • 2 chopped scallions (optional)

Instructions

  1. In a high heat wok , add 2 tbsp of butter and stir in the chopped garlic with the
    marinated shrimp and cook until its pink for about 2 mins then set aside.
    In the remaining oil in wok scramble 2 large eggs(add in a dash of pepper and sea salt)
    and set that aside as well.
  2. In the same wok, add 1 tbsp of butter to the hot wok, stir fry the frozen veggies for 2
    minutes or until tender then add in soy sauce, scrambled eggs, cooked shrimp and lastly t
    the cold jasmine rice.
  3. Mix thoroughly like your life depended on it OR until its all blended well.
    You can add 1/2 teaspoon of chili sauce paste for extra kick to your fried rice (optional)d. Serve hot with a
    sprinkle of scallions on the top.
  4. Enjoy the true taste of seasoned Fried rice!
