Chocolate chip cookies

Who doesn’t like a good Chocolate Chip cookie? I must say my mother-in-law makes the Best cookies in the world!! she inspires me to bake. Baking was never my thing. in fact, I never baked except for a couple of times until I met my husband. Getting introduced to the baking culture in Indian families from Trinidad made me realize baking is so much fun and it actually tastes better when made at home. This recipe is my version of my mom-in-laws cookies. I have made a few changes to it but it’s still about the same. My family absolutely love these cookies!! Hope you enjoy them too.

Ingredients

  • 2 large eggs
  • 2 1/2 sticks of soften unsalted butter (20 tbsp.)
  • 1 cup dark brown sugar
  • 1/2 cup white granulated sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 pack of semi-sweet mini chocolate chips
  • 3 cups of unbleached flour

Instructions

  • Preheat the oven to 375 F
  • In a large bowl mix soften butter with (dark and white) sugar using a hand mixer for few mins.
  • Add in 2 eggs and mix again
  • Add in vanilla extract, salt and baking soda to the mixture.
  • Add in the unbleached flour one cup at a time into the butter sugar mixture.
  • Add in chocolate chips.
  • Tip: To mix the dough evenly I always use clean hands to make a soft dough. (Do not over mix the dough as it will start to get hard)
  • Once the chocolate chip dough is soft and ready. Scoop it with a small ice cream scooper into a aluminum foil coated cookie tray
  • Tip: Do not make hand rolled cookie dough balls, instead just use the scooper for a perfect crispy and taller texture cookie.
  • Bake for 12-13 minutes or until soft brown edges.
