On the side, in a steel pot start the syrup by boiling water and sugar together. Add in cardamom pods and strands of Saffron, stirring it on a medium-high flame. Keep at it until there is a sticky consistency and thicker in texture. (15-20 mins) once done strain cardamom pods and set aside.

(TIP: Add 1 tablespoon of milk to the boiling pot and let it curd to the top, that helps take out any impurities there might be in the sugar) (optional) In the picture below you can see impurities.

Lastly, start by heating oil in a wok or frying pan. Once the oil is hot start by taking individual apple slices and dipping them into the batter, coat them on all sides and immediately start frying. Fry them until slightly puffed up on all sides.


Take them out and rest them on a paper towel for about a min. After a minute start dipping the fried apple jalebis in the sugar syrup and take them out right away, set them aside in a plate.


Serve them hot. Garnish with saffron strands and pistachio bits.
