Green beans with potatoes

Hello all,

I hope all are well staying home and washing their hands frequently. I know what has the world come to when I have to greet this way. haha! well, lets hope and pray this phase of our lives will be behind us soon. Today I have another delicious vegetarian recipe. It might be vegan as well since I used no milk-based products, so yeah it is a VEGAN recipe. It is so worth eating your vegetables when they’re cooked with spices and seasoning.

Ingredients

  • 1-2 lbs of fresh green beans washed and chopped into half-inch size.
  • 1 tomato chopped
  • 1 medium onion chopped onion
  • 1 potato chopped into cubes or close enough
  • 1 tablespoon of ginger, garlic and cilantro paste (store-bought ginger garlic paste will work )
  • 1/2 of teaspoon cumin and mustard seeds (mustard seeds are optional)
  • 3 tablespoons of vegetable or peanut oil
  • 1-2 greens chilies chopped (substitute with 1/2 of a jalapeño pepper)
  • 1teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • salt to taste
  • 1 tablespoon of water

Instructions

Directions:

  1. In a pan, add oil to heat on medium flame, once hot add in the cumin and mustard seeds, let it sputter and then go on to add the chopped onions and potatoes, fry them for about 4-5 mins or until translucent.
  2. Add the tomatoes and green chilies next and stir fry another 3 mins, introduce salt now so the potatoes would cook faster.
  3. After this add in chopped green beans and ginger garlic cilantro paste, turmeric powder, coriander powder. mix well and cover the pan with a lid. Let it cook on medium-low flame for 5 mins.

4. Make sure to stir again and add in a tablespoon or so water (not too much) cover and let it cook for another 7-8 mins.

5. Turn the flame on super low and cook for another 2 mins.

6. Uncover and smell the goodness. It should be ready to eat with roti(flatbread) or rice and daal (lentil stew).
