Spicy Vegetarian Pulao

Hello Friends,

Today I bring to you a short video of how to make easy and delicious Veg medley Pulao. Pulao means rice with fresh vegetables and earthy spices. You can make non-vegetarian Pulao as well with chicken, shrimp, or any meat you like. This dish is of course Gluten-free and that’s an added bonus.

Enjoy it with some sprinkled lemon juice! 

Spicy Vegetarian Pulao

Ingredients

  • 1 cup uncooked basmati white rice. (washed and rinsed)
  • 2 tablespoons of Vegetable oil or Ghee
  • 1/2 teaspoon of cumin seeds
  • A quarter cup of frozen veggies like peas.corn and carrots
  • 1 half of sweet onion chopped
  • 1 potato chopped in cubes
  • 1 cup of cauliflower chopped or any other vegetable you like.
  • 1 plum tomato chopped
  • 2 cloves of cardamom and cloves (whole Garam masala)
  • 1 tablespoon of ginger garlic and cilantro paste or 2 tablespoons of crushed ginger garlic.
  • 1 teaspoon of turmeric, red chili powder, cumin, and coriander powder(optional)
  • 1/2 teaspoon of Garam masala
  • 2 cups warm after (if you want it a little sticky ) OR just add one and a half cup of water for grainy consistency).
  • 1 cup of fresh spinach (put this at the very end when starting to boil)
  • Salt to taste and 1 teaspoon of black pepper.

Instructions

  1. Please follow the video below. Start by first adding the whole garam masala to the heated Ghee/Oil (cardamom, cloves ), cumin seeds, then the chopped onions, stir them for about 2-3 minutes until translucent.
  2. Add in chopped tomatoes and vegetables( potatoes, frozen veggies, cauliflower, salt, black pepper, ginger garlic paste, garam masala, red chili powder, turmeric powder and mix well. (leave spinach for the end)
  3. Then add one cup of raw Basmati rinsed rice. Stir well.
  4. To the mixture add 1 and 1/2 cups to 2 cups of warm water. Stir well.
  5. Finally, add spinach leaves and let it cook covered on medium-low flame for about 15 mins and then low flame for about 5 more minutes.
  6. Turn off the gas and open the lid. Smell the delicious Pulao.
  7. Garnish with lemon and onion slices.
