Moringa drumstick Daal

This is one of those Daal’s that you can’t stop eating. This daal recipe is made with Toor Daal (lentil soup). It is high in fiber and protein. Moringa drumsticks add more protein to the equation and taste. It is a very simple method of making daal in a pressure cooker, also can make it in a regular pot just add 20-25 extra minutes of cooking time. Let’s dig into my childhood with this recipe. I loved it then and I love it now.

Ingredients

  • 1 cup Toor daal (washed twice)
  • half an onion chopped
  • 1 plum tomato roughly chopped
  • 4 cloves of garlic mashed
  • 3-5 curry leaves (optional)
  • 1 teaspoon each (mustard seeds and cumin seeds)
  • 2 tablespoon ghee
  • salt to taste
  • 1 cup frozen Moringa drumsticks (Indian grocers)
  • 2 cups of water
  • 1 teaspoon turmeric
  • 2 teaspoons of red chili powder
  • Cilantro (optional)

Instructions

  1. In a pressure cooker, heat 1 tablespoon of ghee, add in garlic, onions, cumin seeds, mustard seeds, and curry leaves. Stir fry for a minute or until golden brown.
  2. Add in washed Toor daal, salt, turmeric powder, and red chili powder and stir well.
  3. Add water to the pot.
  4. Add chopped tomatoes and Moringa drumsticks into the pot and stir well.
  5. Cook under pressure for 15-18 minutes, if you do not have a pressure cooker or instant pot, please double the time of cooking in a regular pot (30-35 mins) (Toor daal does take longer to cook than other lentils)
  6. Tip: How to eat Moringa drumsticks: Eat the drumstick from inside of it, it's the soft seeds that are cooked and have the most protein and fiber. Discard the shell.
  7. Serve it with a tablespoon of ghee on top with some basmati rice and a side of achaar.
  8. Garnish with cilantro. Enjoy the simple foods.
