Aloo Gobi (spicy cauliflower and potatoes)

Hello All,

This is my favorite vegetable EVER !! I love spicy cauliflower and potatoes together, they are just amazing with some Naan/ Paratha or simple chapati (wheat flour flatbread) or any pita bread you have at home. It’s a very simple dish to make which is filling and delicious.

Here’s the recipe, it is a Vegan recipe. Yay!!

Ingredients

  • 3 tablespoons of oil
  • 1 small onion chopped
  • 1 medium tomato chopped
  • 1 medium-sized potato diced
  • 1 teaspoon cumin seeds
  • 1 teaspoon of turmeric powder
  • 1.5 teaspoon garlic and ginger paste or (ginger, garlic and cilantro paste)
  • 1 teaspoon salt ( as desired)
  • 1 teaspoon red chili powder (optional)
  • 1 green chili chopped or Jalapeño pepper
  • 1 whole head of cauliflower washed and chopped into small pieces

Instructions

 

Directions:

  1. In a medium pot, heat the oil on medium flame and add in cumin seeds, sauté for 10 seconds and add chopped onions and green chili. mix well for about 5 mins.
  2. After, add in the sliced potatoes and cauliflower and sauté for about a minute.
  3. Add in tomatoes and ginger garlic paste, turmeric powder, salt, red chili powder and mix well.
  4. Cover and cook for 12-15 mins on medium heat checking every 5 minutes to make sure it's not burning at the bottom. Steam cooking in its juices gives this dish a great taste.
  5. Lastly, garnish with cilantro and serve hot with Roti or Paratha.
