Sautéed curry Broccoli

Hello food lovers,

Today I would like to share my secret of how to make veggies taste so good that you can’t resist devouring them all! This quick and easy recipe will keep you wondering why it tastes so good, Bland veggies are not my cup of tea but these saute’ ed with curry flavor, I can eat all day long. Try it! you won’t regret it. This is also a Vegan recipe.

Ingredients

  • 1 Frozen pack of mixed carrots & peas
  • 1 broccoli flower chopped and washed thoroughly
  • 2-3 tablespoon of vegetable oil or any available
  • 1 medium onion chopped
  • 1 teaspoon cumin seeds
  • 1 tablespoon ginger, garlic, and cilantro paste or crushed ginger and garlic together.
  • 1 teaspoon turmeric and red chili powder
  • 1 teaspoon salt to taste
  • 2 garlic cloves coarsely chopped for added flavor

Instructions

  1. In the desired pot, heat oil on a medium flame. Once the oil is hot, drizzle the cumin seeds and coarsely chopped garlic cloves. Saute for about 30 secs and add the chopped onion and saute until golden brown or for about 3 mins.
  2. Add all the mixed vegetables and saute on a high medium flame for 4 mins as the vegetables are soaking the flavors of cumin and garlic, add in ginger garlic and cilantro paste (or crushed ginger and garlic) and mix well.
  3. Also add in the spices ( turmeric, red chili powder, salt ) Mix well. Cover and cook on medium to low flame for about 8-10 mins. Make sure the lid is on the pot as we haven't added any water to cook the veggies but they will cook thoroughly in its own vapor/steam created water. Also by covering the pot and cooking brings out the most flavorful taste you have ever had with vegetables. Turn the gas off. Serve hot with Pita bread, pasta, or even just by itself.
  4. Enjoy the taste of seasoned vegetables! It's delicious!
