Garlicky Okra

Today I want to share my love for vegetables. No! seriously I’m gonna make you love them too and trust me! Indians are amazing in preparing vegetables to perfection. This recipe of ladyfinger/okra is extremely simple to make and super tasty. Pair it with Roti (chappati, which is wheat flour flatbread ), naan bread, rice, and daal(lentil soup) or just as a side dish on your dinner menu. Just to clear any confusion Ladyfinger and okra are the same. This is also a VEGAN healthy recipe.

Ingredients

  • 2-3 lbs of ladyfinger/okra washed and cut into small pieces
  • 1 chopped plum tomato
  • 1 small onion chopped
  • 2 green chilies (optional) although you can use 1/2 of a jalapeno thinly sliced
  • 3 cloves of garlic roughly chopped
  • 1 teaspoon cumin seeds
  • 3 tablespoons of oil
  • 1 teaspoon turmeric powder and salt to taste

Instructions

 

  1. In a medium pot heat oil and throw in cumin seeds and fresh chopped garlic. Let it sputter and after a min add in onions and green chilies.
  2. Saute for 2-3 mins or until light brown in color.
  3. Once the onions are well sauteed, add in the okra and stir fry uncovered for 5 mins.
  4. (TIP: please make sure to leave the chopped okra out for about an hr before you cook them as this will reduce the stickiness and help is to cook well)
  5. Once well mixed add turmeric powder and salt. Keep on stirring.
  6. Once the stickiness of the Okra is much-reduced add in the chopped tomatoes, mix well and cover to cook for about 10 mins on low to medium flame, checking every 5 mins.
  7. Open the lid every 5 mins to make sure it's not burning because we're cooking it on steam and its natural juices without adding any water. This way we get full nutrients of our vegetables.
  8. Cover and cook until it's tender to touch and looks like the video below.
