Chicken Lo mein

I love any type of noodles! especially the kind you can stir-fry! D you? If yes, then this Lo Mein noodle stir fry recipe is for you. It’s so simple and hardly requires any prep work. I still remember as a child I would be fascinated with food stalls in the streets of Mumbai making Noodles on a wok, I loved to watch them especially their high tosses as they cooked. This is just my small attempt on making some quick stir fry noodles, hope you like them . We enjoyed them at my house. Here’s a quick recipe

Ingredients

  • 1 cup of thinly sliced chicken breast (optional) (marinate it in salt, black pepper, and 1 tablespoon of cornstarch and soy sauce) set aside
  • 3 cloves of garlic minced
  • Half an onion thinly sliced
  • Half of a bell pepper thinly sliced ( I added fewer veggies cause my kids won't eat if they see too many in the noodles)
  • 3 tablespoons of vegetable oil
  • 1 egg
  • 3 tablespoons of Oyster sauce
  • 2 tablespoon of lite Soy sauce
  • 1 tablespoon sriracha sauce (optional)
  • 1 pack lo mein noodles boiled and ready to go as per the directions on the pack. (tip: Do sprinkle it will some olive oil to keep them crisp and separated.
  • A couple of stalks of green onions chopped for garnish. (I used cilantro cause that's all I had in the fridge)

Instructions

  1. In a large wok heat vegetable oil. Add minced garlic and stir for a min until light brown in color, then add marinated chicken stripes. Cook for about 4 mins of high flame.
  2. After chicken partially cooked, add any veggies you like. Stir fry for about 3 mins.

3. In the same wok, crack an egg on the side and scramble it good.

4. Keep in stirring all on medium-high flame.

5. Once cooked, add in the cooked lo mein and give it a good stir.

6. Add in soy sauce and Oyster sauce also I added a tiny bit of sriracha sauce. (it's optional if you don't like it spicy).

7. Stir fry it well until all the sauces are mixed in and lastly, garnish with green onions or cilantro and enjoy!
