Sassy Chicken Quesadilla

Here’s a recipe to my Sassy Chicken Quesadillas. I love these quesadillas with some soup on the side. Perfect for a weeknight meal. My twist on this recipe is that seasoned chicken taste, it really lifts up this simple dish, I can’t say it enough that a little seasoning makes all the difference.

Sassy Chicken Quesadilla

Ingredients

  • 3 lbs of chicken tenderloins washed and cut in cubes
  • Ginger garlic cilantro paste,
  • Salt and pepper to taste
  • 1 tablespoon olive oil and lemon juice.
  • PAM original cooking spray
  • One cup any mixed peppers and onions chopped
  • McCormick grill mates (Montreal chicken)optional
  • Flour fajita tortillas
  • Kraft or any brand mixed shredded cheese pack

Instructions

  1. Start by washing the chicken thoroughly, marinate it in salt, pepper, ginger garlic cilantro paste and a tablespoon Olive oil. Set aside.
  2. In a grill pan, spray PAM and heat it on medium-high flame. Grill the chicken tenderloins 6 mins on each side. After done sprinkle some lemon juice and set it aside to cool. Once cooled cut them into small bite-size pieces.
  3. Wash the same grill pan and spray PAM to stir fry the mixed peppers and onions, this adds more flavor to the taste. once lightly browned, set aside.
  4. In the same pan, add PAM spray and start by grilling the first tortilla, then add the toppings (chicken, mixed peppers, and cheese) Cover with another tortilla and spray some more PAM spray on the top side of it. Slowly with the help of a large spatula flip the quesadilla to the other side. Cook each side for about 2 to 3 mins or until the cheese melts. Repeat this process for as many as quesadillas you want to make.
  5. You can use the shredded cheese or the pepper Jack cheese for extra spice.

     

  6. Easy to assemble but be careful while flipping it to the other side.
  7. Serve the quesadilla with some salsa and sour cream. A side of tomato or noodle soup would be perfect. Enjoy!
