Perfect cup of Chai (Tea)

Good morning all,

Here’s a really close to heart recipe that I want to share with you today. Ever since I was little I remember drinking hot and sweet chai in the morning. My mom would make a pot of it and put it in the thermos before she left to go to work. I and my siblings had our cup every morning religiously, practically without a cup of chai our day was incomplete. Actually we would have our chai (tea) every morning and evening at about 5 pm, it was our ritual. Just like America runs on “Dunkin”(coffee), India (most Asian countries) run on Tea also known as “Chai” in the Hindi language. It has just the right amount of sugar and spice in each cup. Hence, today I will share my secret of a perfect cup of Chai (Tea).

Ingredients

  • 1 Cup whole milk
  • 3 cups water
  • 2 crushed cardamom pods or (1 teaspoon of cardamom powder) - crush it with a rolling pin in a plastic bag OR in a mortar and pestle
  • 1 inch or teaspoon crushed fresh ginger
  • Blend it together in a mortar and pastel or in a Ziploc bag
  • Red label Teabags (Indian tea brand) OR Tetley/Lipton black tea bags
  • 1-2 teaspoon of Turbinado sugar or any kind you like.
  • Strainer to strain the spices and tea bag remains.

Instructions

  • In a pot add the water and milk together and set it to boil on a medium-low flame. Once it's boiling over, turn the gas to low and add cardamom and ginger crushed together

  • Let it boil a little more for about 3 minutes as it infuses the flavor of spices in the tea.
  • After about 3 mins add in any black tea bags or loose tea (preferably Indian tea). At this point, you can add sugar to the pot itself but, if you prefer no sugar then skip this step or add it in after the Chai is poured out in cups. That way you decide how sweet you want it to be.
  • Let it boil on low flame until the color changes from white to a caramelized brown color.
  • Once poured out in the cups! enjoy the pure taste of India's Chai (tea)

Notes

Green cardamom pods are the only ones I use. Not the White cardamom pods although they are flavorful too but not as much as the green ones.
