Grilled Chicken tandoori

Hello All,

It’s almost the weekend and I know people look forward to going out on a night out with their special one BUT if you can actually prepare something quite delicious at home and have a candlelight dinner wouldn’t that be great too? Well, this grilled Chicken breast is absolutely a great dish to have over pasta, as a sandwich, over a salad, in a roll-up, with naan, hummus, and sweet potato fries. there are so many ways to eat a good protein like this one. At the restaurants, they actually make Tandoori chicken in a clay oven and it takes quite a bit of time and can be expensive. Do try this recipe let me know what you think.

I made mine with pasta and it was delicious, add your regular pasta sauce in your pasta and then the basil and grilled tandoori chicken.

Ingredients

  • A pack of thinly sliced chicken breast or chicken tenderloins (about 3 lbs)
  • 2 tablespoons of plain yogurt and lemon juice
  • 1 teaspoon Turmeric, red Kashmiri chili powder, cumin, and coriander powder
  • 1 tablespoon garam masala powder and Ginger garlic and cilantro paste
  • Salt and black pepper
  • 3 Olive oil to marinade and original PAM spray for grilling
  • Orange/Red food coloring (SWAD is my favorite)

Instructions

 

  1. ash the chicken thoroughly with Lemon juice or white vinegar and water and cut the excess fat on it. This helps to take away any fresh smell from the Chicken.
  2. In a large bowl marinate the chicken in ginger garlic cilantro paste(or ginger, garlic paste), plain yogurt, lemon juice, turmeric, red chili, cumin and coriander powder, garam masala powder, red food coloring, salt and black pepper to taste and olive oil. Set it aside for at least 15-20 mins (an hour would be great) this gives the chicken time to soak up all the goodness from the spices and make it tender.
  3. In a grill pan, spray some PAM and let the pan get nice n hot. Once at a good temperature, throw-in 2 chicken breasts at a time, unless your pan is as big as mine then you can do 3 at a time.
  4. Make sure you give 4-6 mins on each side to cook. Also, check the temp once cooked, it should be 160 F
  5. Once off the grill, sprinkle lemon juice and garnish with some cilantro and slices onions.
  6. You can enjoy the leftover chicken n a salad or over pasta. It tastes amazing!
