Here’s a festive recipe for all the nut lovers…I mean coconut lovers. I practically grew up eating a lot of nut related desserts and appetizers. Here’s one which I thoroughly enjoy around Christmas or any other festivities. This recipe is by far the easiest of all the coconut desserts I know that are made in India. Overall the sweets made in India are handmade and take quite a long time to make as many homes do not have the privilege of having hi-tech shredders or blenders. I remember my mom slogging in the kitchen until 1 o’clock at night when it was Christmas time but that didn’t stop her from making all those yummy goodies for us. I think we’re fast approaching the Christmas holiday season and I can’t wait to smell the cookies and desserts in the air. Do try this one and let me know what you think.
Ingredients
- coconut powder pack (14 oz)
- Sweetened Condensed milk (half cup)
- Cardamom powder (1 tablespoon)
- Ghee (2-3 tablespoons)
- Almond slices for garnishing
- Salt to taste (half teaspoon)
Instructions
- In a large non-stick pan, add in the ghee at low medium heat. Do not fasten this process as ghee burns fast. Start by adding almost the whole pack of coconut powder (save 1/4 cup for rolling the ladoo at the end)in the ghee and stir it until slightly golden brown, about 6-9 mins. Add salt, this makes the taste even richer.
- Then slowly add the condensed milk into the mixture, sprinkle the cardamom powder, and stir slowly.
- Keep on stirring while you add the condensed milk. Once done, the mixture should be soft
- and ready to mold into small 1 inch balls.
- Turn the gas off, take the pan off and set it on a table or island.
- Let it cool for a minute or 2.
- Then slowly start to mold the ladoo one by one, roll it in some leftover coconut powder and decorate it with a slice of almond. After finishing this process they are ready to devour!
