Happy Weekend! Craving some extra heavy pasta dish this weekend? I know you don’t wanna gain that extra 2000 calories right? Well look no further than this perfect alternative to that extremely heavy creamy pasta. I love making this on week nights or sometimes on weekends too. The ingredients are simple and this dish comes together swiftly.
Ingredients
- 1 pack Thin Spaghetti (Barilla Brand is my favorite)
- 2 cups grilled chicken breast. (If you want to see how I grill my seasoned chicken breast, check out my Instagram video. )
- 3-4 cloves of garlic chopped
- 1.5 cups of whole milk (You can use fat-free )
- 1 cup of pasta water
- 1/4 cup grated Parmesan Cheese (Kraft Brand)
- 1 cup cooked broccoli
- 1 chopped tomato
- 1 teaspoon each of Oregano and Parsley
- half lemon zest(1 teaspoon) 1.5 teaspoon of Juice
- 1 tbsp. of butter
- 2 tbsp. of olive oil
- 1 tbsp. of flour
- Salt and Black pepper to taste.
Instructions
- Start by marinating chicken tenderloins with salt, black pepper, olive olive and ginger garlic cilantro paste. Grill it on a grill pan and set aside.
- In a large pan, On medium heat ,add in butter and whisk in the flour until golden brown
- On the side start boiling water for pasta. Before you add the pasta and salt to the boiling water, let Drop in the broccoli and cook it for 4 mins on high , and immediately take it out and let it cool.
- Then add salt to the pasta water and cook the pasta according to the directions.
- To the large pan, add cooked broccoli, grilled chicken , parmesan cheese, pasta water, 1 cup milk , the herbs (Oregano, Parsley) and salt, black pepper, Mix well and cover to cook for 4 mins.
- Next, open the lid, add more parmesan cheese and milk , lemon zest and lemon juice.
- Cover and cook for 5 mins on low setting, check for salt .
- Plate it up with some steaming hot spaghetti , top it off with this amazing Skinny Alfredo sauce, garnish with dried or fresh parsley.
