On the quest of eating healthy these days it’s hard to pick things that are healthy and taste good.
Well today I’m introducing a healthy vegetable with high in nutrients and also great tasting. Even when bitter to taste, there are so many great properties to this amazing vegetable. It not only helps you lower the risk of diabetes but also you keep regular, while balancing your body cycle. This recipe is a glimpse into my childhood. My mom made us eat vegetables practically everyday, but trust me she would make them taste so good that eating them vegetables didn’t feel like a bad idea!
This recipe is passed on by my grandmother to my mom and now to me. The key ingredient in this recipe is jaggery, also called GOR in Hindi language. It is pure sugarcane sugar that takes away the bitter taste of the gourd (karela) . It’s the raw form of sugar, just like honey and it’s natural and healthy.
Ingredients
- 3-4 bitter gourd, washed and cut into thin slices with seeds taken out (see instructions for pic)
- 1 small onion chopped
- 1 small tomato chopped
- 1.5 tablespoon of jaggery (or jaggery powder)
- 1 tablespoon ginger garlic cilantro paste (OR ginger garlic pate )
- 1 teaspoons of turmeric, salt and red chili powder.
- 1 tablespoon cumin seeds
- 2 tablespoons oil
Instructions
- In a medium pan, add oil to heat
- Add cumin seeds and let them spatter
- Add chopped onions and sauté them for 3-4 minutes
- Next, add the tomatoes and cook them for few minutes
- Add the thinly sliced karela (bitter gourd) and stir well
- Add the jaggery crushed pieces, spices and seasoning (salt, turmeric, red chili powder and ginger garlic paste)
- Stir well and cover and cook on medium low heat for 10-12 minutes
- Once its tender and fully cooked , turn off the heat .
- Serve hot with roti or Khichdi
