Cheesy Chicken Enchiladas

Here’s my super easy cheesy Chicken enchiladas in red sauce recipe. I love me some seasoned chicken bursting with flavors and taste in my corn/flour tortillas. I’m all about seasoning my meats and veggies the right for a healthy, delicious dinner. Perfect for a weeknight when you have tons of things to do. Enjoy!

Ingredients

  • 1 can of Old El Paso red enchilada sauce.
  • Half cup of chopped green onions( divided it into 2 parts)
  • 1 tablespoon ginger garlic paste
  • 1 tablespoon oil or butter
  • One pack of Mexican blend cheese .
  • 6- 8 corn tortillas

Instructions

1. In a pan sauté shredded chicken green onions ginger garlic paste and half cup of red sauce.
2. Stuff the corn tortillas with the chicken mixture.
3. On a baking dish assemble your stuffed corn or flour tortillas . Add shredded cheese and the remaining red sauce and green onions.
4. Bake for 20 minutes at 350 Fahrenheit
5. Serve hot what some refried beans .
