Hello everyone!
Happy Monday to you. today we will discuss the vital importance of pasta in our homes. Pasta has become a staple food in America. Every household has pasta in their pantry. Practically most people cook pasta at least once or twice a week. In my household, we do the same. Its either mac’ n cheese or Spaghetti for dinner (once a week) but this time I dared to add in some broccoli to my homemade Alfredo sauce. To my surprise the kids loved it and it encouraged me to post this super delicious recipe. Hope you enjoy it.
Ingredients
- 1 head of broccoli washed and chopped in medium pieces.
- 1 Pack of Rigatoni pasta (I used Barilla pasta)
- 2 chicken breasts washed thoroughly and tenderized or use a pack of chicken tenderloins
- (once tenderized marinate the chicken in 2 teaspoons of olive oil, ginger garlic cilantro paste, salt, and black pepper)
- 1/2 teaspoon of Mrs. Dash's Lemon Pepper seasoning we well. (optional)
- For the Alfredo Sauce:
- 1 teaspoon of Lemon zest
- 1 tablespoon of flour
- 4 tablespoon of butter
- 4 cloves of garlic minced
- 1/2 teaspoon dried basil
- 1 teaspoon dried Oregano
- 2 1/2 cups of whole or 2 % milk
- 1/3 cup of Parmesan cheese (Kraft brand is great)
Instructions
- In a large pot start by cooking the pasta according to the directions on the box and set aside.
- (Tip: Blanch the broccoli first in the rapid boiling salt and olive oil water that you've started off for the pasta. With the help of a strainer take the broccoli out of the pot and then add the pasta to boil. This will save you time and dishes)
3. In a large grill pan, grill the 2 chicken breasts (6-8 mins on both sides on medium flame)
also, sprinkle some PAM spray on the chicken so it doesn't get dry.
4. Transfer it to a cutting board and cut it into bite-size pieces and transfer it back to the pan for another 4 mins with a lid on it. This will help the chicken to be moist and tender in the pasta dish.
5. Moving on to the Alfredo sauce, In a large pan, add in butter and let it melt on a low medium flame, once melted add in the garlic, cook the garlic and then add the flour to the mix, with the help of a whisk blend it well.
6. After the mixture has turned into a nice golden color add in milk little by little starting with just one cup of milk, then sprinkle the Parmesan cheese. whisking it perpetually.
7. Do not add all the milk as this might curd the milk or break it. Once well whisked let it slightly boil into a soft Alfredo sauce, immediately add in the grilled chicken and blanched broccoli.
8. Sprinkle a little bit of the lemon zest. Mix thoroughly all the ingredients.
Your magnificent one-pot dish is now ready to be served!
