NAVRATHAN KORMA

Navratan Korma is a rich, creamy medley of 9 vegetables in spices and herbs made to entice the Mughals back in the day. The word “Nav” represents the number 9, which indicates there are 9 vegetables mixed in a thick spicy, flavorful gravy that make your taste buds dance for joy. This is a pure vegetarian dish and can also be vegan by substituting paneer for tofu. The korma curry is usually paired with paratha (Indian butter bread, Naan or Roti ) and rice. It is an old ancient dish that has been served to kings and queens and still is popular in the north of India.

Ingredients

  • 4 cups fresh or frozen veggies ( broccoli, cauliflower, carrots, tomatoes, peas, corn, green beans, Paneer)
  • 1 cups cubes paneer ( milk Indian cheese)
  • 3 tablespoons oil
  • 1 tablespoons ghee
  • 1 tablespoon butter
  • 1 tablespoon of Ginger garlic paste
  • 1 teaspoons turmeric powder
  • 2 teaspoons red chili powder
  • 2 teaspoons garam masala powder
  • 2 teaspoons cumin powder
  • 1 teaspoon dried Kasturi methi
  • salt to taste
  • 1 teaspoon sugar or jaggery
  • Garnish with 2 -3 red fry chilies 🌶️
  • For gravy
  • 1 cup chopped onions
  • 1 cup tomatoes chopped
  • 1/3 cup roasted cashews

Instructions

  • In a large skillet heat vegetable oil and add onions, tomatoes and cashews. Stir fry them for 2-4 minutes until golden brown
  • Set it aside and let it cook for 5 mins. Then blend it in a blender with 1 tablespoon of Ginger garlic paste( I also add cilantro to my paste)Make it into a smooth paste. Set the smooth gravy aside.
  • In the same pan , add in butter and cook the vegetables on a low flame .
  • Add turmeric, salt, red chili powder, cumin powder and garam masala powder.
  • Mix well and steam for 3 mins on low flame.
  • Add in the gravy mixture and 2 cups of warm water.
  • Cover and cook for 6-7 minutes or until vegetables are tender.
  • Add in Paneer cheese , Kasturi methi and sugar . Mix well and cover to cook for 2 mins.
  • Adjust salt and spice level accordingly
  • Add dry fruits like cashews, raisins and slivered almonds
  • Garnish with fry red chilies and serve hot with rice, roti or Paratha
